The -Other- White Meat Pork Loin with Garlic, Sage and Rosemary

The Other White Meat Website has removed a recipe. That's a mistake, this is one of the best recipes for pork I've ever eaten.

1 1/2 to 2 pounds pork loin
4 cloves of garlic, peeled and mushed
2 tsp. salt
2 tsp. sage, powder
1 tsp. rosemary, powder
3/4 tsp. black pepper
1 tbs. olive oil

Mix the ingredients well. Rub on the loin and rest 60 minutes. Pre-heat oven after 45 of marination to 450° F. Place roast in oven for 15 minutes. Lower heat to 300° F. and cook to an internal temperature of 150° F.

Remove the roast from the oven. Tent for 10 minutes. Internal temperature should reach 160° F.

Slice and serve. Goes well with yam and salad.
